Zucchini Bites

As Lizzy enters the wonderful toddler years trying to get her to eat vegetables is becoming challenging. Luckily for me, I’ve been hiding veggies in my husbands food for years so I already had a few ideas of how to tackle this one.

I decided to make some ground chicken zucchini bites which were not only delicious but due to the number of people asking for the recipe I decided maybe I should start blogging about my recipes. Not only is this so I can share my recipes, it is can also so I don’t lose the recipes I make and remember if I liked them or not.

Ok, these zucchini bites were amazing! The only thing I would change was I think I put a little too much garlic in and didn’t chop the onion small enough.

Also, I need to let the ground chicken sit out for a little bit because my hands were FREEZING mixing all those ingredients together! Ok, here is the recipe!

Chicken Zucchini Bites

Ingredients
  • 1 Zucchini, grated with peeling on
  • 1 lb ground chicken
  • 1/4 cup onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 cup Parmesan cheese, grated
Instructions
  1. Preheat oven to 425 F.

  2. Shred the zucchini with the peeling on and place into a large mixing bowl.

  3. Add in all the other ingredients, ground chicken, onion, garlic, salt, paprika and Parmesan cheese, and mix well until well blended.

  4. Spray a cookie sheet with cooking spray or line a cookie sheet with aluminum foil and lightly coat the aluminum foil with olive oil. You want to avoid the Zucchini Chicken Bites from sticking. 

  5. Take a Tablespoon of the Zucchini Chicken Bite batter and roll it into a loose ball. Place the balls 1 inch apart on the cookie sheet.

  6. Bake for 20 minutes. 

  7. Once the 20 minutes is up, turn your oven to broil. Let the Zucchini Chicken Bites broil for about 5 minutes, or until the tops turn brown and crispy.

  8. Let these cool for about 5 minutes before eating. Serve with your favorite dipping sauce. Store any leftovers in the refrigerator. 

Recipe Notes
  • These Zucchini Chicken Bites bake really well on a flexipan, so if you have one, use it!
  • Ensure the Zucchini Chicken Bites are at a temperature of 165 degrees before removing them from the oven. 20 minutes plus the 5 minutes of broiling should cook them fully, but it’s always good to double check!
