Cilantro Lime Chicken

Sundays are food prep days in the Nelson house…

This used to be a HUGE task for me because I would prep all my meals and husbands meals for the week. Since I started drinking shakes for lunch (thank God!), I now only have to prep my hubby’s lunches. I tried out a recipe for Cilantro Lime Chicken and my hubs decided he wanted this in his weekly line up. I prep extra of this chicken because it is probably my favorite thing to have in the fridge for when I’m not feeling like cooking.

This chicken is great on its own, over rice, with avocado salsa, guacamole, in a salad, or in tacos. It’s SO versatile and makes a quick and easy healthy lunch or dinner.

What we prep for the week:
  • Sweet potatoes
  • Ground turkey
  • White rice
  • Brown rice
  • Cilantro Lime Chicken (extra for me)
  • Rice w/black beans for Lizzy’s lunches
  • Zucchini chicken bites

I still cook dinners most nights of the week but this keeps the hubby and babe fed during the day while I am at work.

Ok here’s the recipe:

Cilantro Lime Chicken:

Chicken Marinade:

    3 pounds boneless, skinless chicken breasts (about 4-6)
    Juice of 3 limes
    1 cup cilantro, roughly chopped
    ½ cup olive oil
    1 Tbsp. honey, or more to taste
    1 tsp. kosher salt, or more to taste
    fresh cracked pepper
    2 garlic cloves, finely minced
    1 tsp. cumin
    ½ tsp. onion powder

Avocado Salsa:

    2 avocados, diced
    2 Roma tomatoes, diced
    ¼ cup shallot, finely diced
    ¼ cup cilantro, finely chopped
    Juice from ½ lime
    ¼ tsp. garlic powder
    fresh cracked pepper & salt to taste

Directions:

  1. Combine the marinade ingredients in a food processor and blend.
  2. Pour into a large resealable bag and add chicken and marinate for a few minutes, up to overnight.
  3. Mix together Avocado Salsa ingredients in a medium sized bowl. Set aside.
  4. Grill chicken over medium-high heat (or on the stovetop) until no longer pink inside. Serve chicken with avocado salsa and enjoy!
