
This recipe came to be because of the ingredients I had on hand. I bought some mini sweet peppers this weekend because they looked SO yummy but I have a bad habit of wasting produce. As I am on the adventure to save more and waste less I decided I had to come up with something to make with these cute little peppers.
I had some ground chicken, onion, garlic, cheese, and left-over cooked rice. Sounded like the perfect ingredients for stuffed peppers. I looked all over Pinterest for a recipe containing my ingredients, no luck. So I decided to just throw it together and see what happens.

I am going to apologize because I don’t have the measurements I used for this recipe, but I think it’s pretty hard to go wrong with amounts.

Stuffed Mini Sweet Peppers
Ingredients:
- 1 lb ground chicken
- Salt
- Paprika
- Frank’s Red Hot sauce
- Parmesan Cheese
- Mexican Blend cheese
- Cooked brown rice (approximately 1 cup)
- 1/4 cup chopped onion
- 1-2 TBSP minced garlic
- Sweet mini peppers
Directions:
- Preheat oven to 400 degrees
- Slice peppers in half and clean out as much as possible
- In a skillet start cooking onion and garlic
- Once the onion and garlic are browned add the ground chicken, 1 tsp salt, 1 tsp paprika, and cook until no longer pink
- Add in the cooked brown rice and add any additional paprika along with Franks Red Hot to taste.
- Stir in 1/2 cup Parmesan cheese to the mixture.
- Spoon mixture into peppers
- Top with Mexican blend cheese
- Bake for 10 minutes
